
Today is the day when we in the US celebrate the birth of Martin Luther King Jr. If you have never heard or watched his I Have A Dream Speech on August 28, 1963, I encourage you to take a listen to it. What he said all those years ago still holds relevant to today.
I am starting a new 40 hour a week 3 month long project working outside of the home, job, for the first time in more than 6 years tomorrow, so this week is going to be all about simplicity in menu planning. I am planning mostly from my freezer this week, you know, all those “convenience foods” that I make and freeze on a regular basis, so I don’t have to think about supper while I am learning a new job. The meals that I have planned that aren’t already in the freezer are quick and easy and can be done in just a few minutes. While I won’t be doing anything physically demanding at my new job (it’s a data entry project), I expect I will be mentally exhausted, not to mention frazzled feeling because I will be adjusting to a new routine.
Monday:
Salmon Patties
Oven fried potatoes
peas
Tuesday:
Potato soup
Wednesday:
Chicken, broccoli and rice
Thursday:
Fat Flush Soup
Friday:
FFY – Fend for Yourself
Saturday:
Veggie Omelettes
Toast
Sunday:
Chili
