I woke up Sunday morning feeling sick and spent most of the day in bed, so please excuse the lack of anything to really say about this week’s menu. I will try my hardest to stick to this plan, but if I feel as unwell during the week as I did Sunday, we will be eating from the freezer all week (thank goodness I have been diligent about putting leftovers in the freezer, along with cooking specifically to fill the freezer).

Monday:

Wednesday:
Chicken Noodle Soup

Thursday:
Pizza

FFY (Fend for Yourself)

January batch/freezer cooking
Spaghetti Sauce
Hamburger, browned – for chili, tacos, etc. – 9 – 2C portions in freezer
1 Meatloaf – 2 in the freezer
1 Salisbury Steak Dinner – 2 in the freezer

Peanut Butter Granola http://www.hillbillyhousewife.com/peanutbuttergranola.htm – I can’t seem to make enough to last, so will be doing at least one quadruple batch this month.
5 lb. various beans (black, red , kidney, navy, pinto) I really love having these beans cooked up in the freezer, and am going to attempt to do this every month.
Multi-grain bread http://www.americastestkitchen.com/recipes/detail.php?docid=7535 – this is my family’s new favorite. I am going to begin making this and slicing it up for our sandwich bread instead of buying bread from the store.

It’s been cold, windy and snowy here in Central IL and all I want to do is curl up on the couch with a blanket, a cup of hot coffee and a big bowl of piping hot soup. With that in mind I have planned two meals that feature soup (or stew).

I had my bi-annual mammogram on New Years Eve – Eve (Dec 30) and on my way home, I decided to stop by the grocery store. Boy am I glad I did, I got really lucky. I intended to buy ground beef at $1.77/lb. and while looking in the meat case, I came across ground beef on a manager’s special at $0.99/lb! I grabbed all 4 packages left in the case (16 lbs in total). Needless to say, I had a marathon ground beef cooking day! 2 meatloaves, 2 salisbury steak dinners, and 18 C of browned meat all in the freezer.

Last week I made Pumpkin Oatmeal Cookies for my Ladies Bible Study Group. OMG! They were so delicious! I used dried cranberries in place of the dried cherries, and I believe it was definitely a good decision. As far as this week’s menu plan, we will be eating mostly from the freezer and pantry, so it will be simple family favorites on the menu and of course the family Christmas dinner.

Turkey – I got an extra turkey during the Thanksgiving sales and need to cook it and put into meal size portions, so I can free up some room in the freezer. - Done

Italian Bread (4 loaves) I am waiting for some space in the freezer before making these.
Pumpkin Spice Bagels *new to us 
Peanut Butter Granola *new to us - Done – I made a double batch of this recipe, without raisins and it was gone within 2 days! I have since made another quadruple batch. This is definitely a keeper.
4 lb. various beans (black, red , kidney, navy- Done 
Multi-grain bread *new to us - Done – This was such a hit with my family that I have decided to make mini loaves for my Ladies Bible Study cookie exchange. I know it’s a cookie exchange, but I am sure some will appreciate a savory treat. We like it su much that I am even considering making this our go-to sandwich/toasting bread. It’s much healthier than store bought (I am in total control of the ingredients) and it tastes better.

Christmas Prep Ahead:

Well, I have spent so much time making items for my freezer this last week, that I have no room to spare. I am not kidding, both the chest freezer and the freezer on the refrigerator are bursting at the seams! Every time I open the doors, something either falls out or pops up! LOL! So with that said, I have had to put a hold on my Christmas prep items. It looks like I will be making them right before Christmas.
